Picon Punch

Picon Punch:

Fill collins glass with ice 
Add 1 tsp pomegranate grenadine and 2.5 ounces Amer Picon (Torani Amer) 
Fill with soda water 
Float 1 oz. brandy on top (Hardy VS)

This is a beast of a cocktail. Good, but very strong. The recipe is from Ted Haigh Vintage Spirits and Forgotten Cocktails. In the edition I have, he notes that the Amer Picon in France was 35 percent alcohol, (Torani's Amer is 39 percent) and that this increase may result in a different cocktail than what the good Dr. was drinking. The cocktail is in the bitter family, something akin to a Americano with Amer acting as the star sporting a fancy hat of Cognac. This one may need to be tried a few times to be appreciated, and/or cut back on the spirits a tad.

@cocktailvirgin elected Torani Amer, a West Coast version of the French Amer Picon "Best Swag" from the Tales of the Cocktail 2010 due to the relative difficulty of acquiring it due to Torani distribution,the spirits boozy nature, and it's deliciousness. A great variation of the original Brooklyn utilizing torani amer is offered here by cocktail hacker. I chose The Liberal from Chuck Taggart for an introduction to Amer, as I was not in the mood for maraschino funk.

1.25 oz. rye whiskey (Bulleit)
.5 oz. Sweet Vermouth (Punt E Mes)
.25 oz Amer Picon (Torani Amer)
Dash homemade orange bitters (optional)

Stir with Ice. Strain.

The spicy bourbon and orange citrus notes lead the nose. I particularly like the combination of the Punt Y Mes with the Amer Picon, creating a spicy, flavorful sip. They are both bold spirits, but compliment rather than compete. The orange bitters helps to highlight the bitter orange flavors of the Amer prominent on the swallow, making for a well rounded and delicious drink. Thanks Chuck!

1 1/2 oz. Gin (Hendrick's)
1 oz. Aperol
1/2 oz. Amer picon (Torani Amer)
1/4 oz. Orange liqueur (Patron Citronge)
Orange bitters (optional)

The rose and orange nose are prominent on the sip. The Torani bitter orange flavors compliment the citrus aspects of the Aperol. Aperol is very different from Campari, lighter and sweeter, however the drink was reminiscent of a lighter Negroni. Read Aperol the Versatile Italian Aperitif from Drink Dogma for more great recipes. With food, the grapefruit notes of the Aperol become more apparent. Homemade orange bitters were added on a later iteration of the recipe which drastically changed the profile of the drink. Try without bitters first, then with and please share your feedback on your version of preference.

Breuckelen- 1 1/2 oz. @BolsGenever, 1/2. oz dry vermouth, 1/4 oz. maraschino, 1/4 oz. amer picon

Breuckelen:

1 1/2 oz. Bols Genever
1/2 oz. dry vermouth (Dolin)
1/4 oz. Maraschino (Luxardo)
1/4 oz. Amer Picon (Torani Amer)
Dash orange bitters (homemade

This cocktail gets it's name from The Village of Breuckelen in the Netherlands and later, the namesake for, the first "official" municipality in what became New York State, owned by the Dutch (Dutch West India Company) before losing ownership during the British conquest of New Netherlands. "Over time, the name evolved from Breuckelen, to Brockland, to Brocklin, to Brookline, to Brookland and eventually, to Brooklyn"

The drinks nose was mead/citrus from the genever and the bitter orange notes of the Amer. Sip warm like a whiskey and smoothed by the vermouth while retaining spicyness. Swallow funky maraschino tempered again by vermouth. Bitters adds complexity and mingles well with the botanicals of the genever.
